If I field skin rats,I do it the same way as Steve.If I am doing rats or mink at the bench,I use a small skinning box that clamps on the bench,has a "V" cut in a board on one end and a 5/16 rod bolted to it.
After the first cuts are made(rats or mink)I push the rod thru and tug the body;frees both legs quick.Then put the body in the "V",work the fur down,rod the front legs,plop it back into the "V" and clean up the head.
Rats under a minute,mink under 2,including the tail.
The guy that showed me the set up could have a mink full skun by the time I made my entry cuts and cut off the feet.
The beauty of the set up is that ANYONE can skin rats and mink quickly on it.No experience necessary.
